If your wine cellar is between 55-60 degrees and you have kept your wine in the dark and want to know if you should be drinking it... This is our recommendation. If a wine is “Past Due” it needs to be consumed. “Enjoy Now,” means that it tastes just fine and you can continue to drink it at a leisurely pace but we think it is at its peak. “Drink or Hold” is the grey zone where in my basement I will be drinking a bottle and deciding if it is ready for my taste or if it should be held. “Hold” is exactly that, I think it needs more time in the bottle before it is at its peak. Often times decanting will open up a “Drink or Hold” or a “Hold” bottle so that it is tasty.
