Bacon and Blue Cheese Tart

Pastry

2 cups all-purpose flour

½ lb unsalted butter

2 Tbls ice water

1 tsp distilled vinegar

Filling

½ lb bacon diced

1 onion sliced

½ lb blue cheese crumbled

½ cup pine nuts

¼ tsp garam masala

¼ tsp chili pepper

¼ tsp cumin

salt and pepper to taste

Pre-heat your oven to 375°.

Pastry:

In a food processor combine flour, salt, and cubed butter. Pulse until butter is just mixed into flour. Combine your vinegar and water then with the food processor running add to the flour mixture, and blend just until a dough forms. Remove your dough from the food processor and gently knead into a ball. Wrap the dough in plastic and put in the refrigerator to rest.

Filling:

In a sauté pan over medium heat cook the bacon until crispy and brown. Remove from pan and set aside. Drain the majority of the grease leaving a little to cook your onions. To the pan add your onions and cook until translucent, then add your spices. Cook for 5 minutes then set aside to cool.

Tart:

Press your dough into a 9-inch round tart pan, pricking the bottom with a fork. Bake in the oven for 15minutes, then fill with the sautéed mixture, and generously sprinkle with your blue cheese. The tart then goes back into the oven for approximately 20 minutes. The cheese should be melted and the crust firm. Let tart cool for 10 minutes before serving.
